Duck egg takes center stage at 31st Balut sa Puti festival
The municipality of Pateros on Saturday celebrated the 31st Balut sa Puti festival, which also marked the locals’ passion to continue the long-standing tradition of making fertilized duck eggs.
The celebration featured a cooking contest among the top chefs of local eateries and their rendition of afritadang balut and pickled itik.
This was followed by an eating contest involving a variety of hot sauces and lots of balut.
At present, 20 Pateros residents earn a living from making balut, with production reaching thousands of eggs per day.
“We may have lost the duck-raising industry, but the balut making in Pateros has been continuous. We are currently actively reviving the balut industry. I believe that in a year or two, balut will be the main industry of the municipality again,” said Pateros Mayor Ike Ponce.
The Pateros municipal government has partnered with the Department of Science and Technology for an incubator technology to complement and improve the yield of the traditional balut-making process.
A Pateros Balut sa Puti Commission will also be formed to promote, supervise, move, and sustain the industry, Ponce said.
